1/2 medium-size Granny Smith or
other tart apple
3/4 lb. boneless pork chops
2 tsp. butter or margarine
salt
freshly ground black pepper
2 Tbs. brown sugar
1/2 c. brandy
2 tsp. cornstarch
1 c. apple juice, divided

Directions:
Directions:
1. Wash and core apple. Thinly slice
and cut slices into 1 inch pieces.

2. Melt margarine or butter in a
medium-size nonstick skillet. Brown
chops on both sides, about 2 minutes.
Remove from skillet, lightly salt and
pepper the browned chops and set
aside.

3. Reduce heat; add apples and sugar
to skillet. As soon as sugar melts, add
brandy and cook 1 minute.

4. Mix cornstarch with 2 Tbs. apple
juice. Pour the remaining juice into
the pan and add the pork. Cook 2 minutes.

5. Add cornstarch mixture and cook until
sauce is thick, about 1 minute. Add salt
and pepper to taste.

6. Serve pork with apples and sauce
spooned on top.
