Gluten Free Peanut Butter Cookies


Ingredients:

1 large egg, at room temperature, beaten
1 cup sugar
1 cup creamy peanut butter
1 tsp. vanilla extract
1/4 tsp. almond extract
Tiny pinch of salt
Chocolate chips (optional)

Directions:

Preheat oven to 350 º
In a large bowl, mix together all of the ingredients.
Drop by tablespoon fulls onto an ungreased baking sheet or one lined with parchment paper.
Flatten cookies with a fork.
Bake for about 15-18 minutes
Remove to a wire rack to cool.

If you love peanut butter, you will love these cookies! Peanut butter is very high in protein making the cookies a very healthy and filling snack.
Using a tablespoon makes a large cookie. If you use a teaspoon, the cookies will be smaller but will take less time to bake.
I suggest that you line the baking sheet with parchment paper.
Chocolate chips make these taste like Reese's candy!
