1 cup (2 sticks) unsalted butter, room temperature
1 cup brown sugar
1 egg, room temperature
1 teaspoon vanilla extract
2 cups plus 2 tablespoons all-purpose white flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon plus 1 tablespoon cinnamon
1/4 cup white sugar

Preheat oven to 350 degrees. Lightly grease one or more baking sheets. Using a hand-held mixer, cream the butter and brown sugar. Beat in the egg and vanilla extract. Sift together the flour, baking soda, cream of tartar and 1 teaspoon cinnamon. Stir into the moist ingredients until well combined. Shape the dough into walnut-sized balls and place on the baking sheet(s). Mix together the white sugar and 1 tablespoon cinnamon in a saucer of shallow bowl. Dip the bottom of a wet glass into the cinnamon-sugar mixture and press each cookie to flatten it. You may sprinkle more cinnamon-sugar on top of the cookies, if you like. Bake for about 8 minutes; do not over bake, this is supposed to be a chewy cookie. Let cool on cookie sheet before removing.
