½ Stick Butter
2 Eggs (beaten)
½ C. Sugar
Nutmeg to Taste
1 tsp. Vanilla
Milk (enough to make a little thinner than pancake batter)

Boil potato (peeled & cut into large slices).
Mash potato with hand masher & blend with remaining ingredients.

Bake at 320º until firm (around 1hr to 1 ½ hr) jiggles a little in middle.
