Zucchini
Flour
Salt & Pepper
Oil

Directions:
Directions:
Slice zucchini in thin slices with skin on.
Rinse with water and drain. This helps the flour to coat better.
Add 1/2 cup or so of flour to coat zucchini slices.
Put 2 tablespoons of oil in electric skillet. Heat to 350
Add zucchini to skillet when hot. Don't dump zucchini in, beacause you do not want the extra flour in the bowl in the skillet. Salt and pepper to taste.
Stir fry till crisp tender.
Add more oil if needed.
