4 Salmon filet or steaks
1 Tbsp. miso paste
1 Tbsp. maple syrup
1 to 2 tsp. gochujang, depending on how spicy you want it
1 tsp. toasted sesame oil
3 Tbsp minced leeks
toasted sesame seeds

Directions:
Directions:
Mix together the miso, maple, gochujang, oil, and minced leeks until well combined. Coat the salmon in the paste mixture and grill or pan-roast until cooked through. Add toasted sesame seeds just before cooking is finished.

I like to serve this with roasted vegetables and soba noodles or on top of a salad.

The glaze recipe is also delicious on roasted eggplant and turnips for a vegetarian meal or side dish.

I lived in Japan for several years and really developed a love of cooking (and eating!) the local cuisine. My friend, Rikako, taught me how to mix miso paste and butter to make a tasty paste and showed me how I could add a bit more oil to thin it out, toss it with noodles, or even add it to ramen for some extra flavor. She said she always kept a batch in her fridge, and that became my habit as well. We took tea ceremony lessons together, I taught her and her son English, we went to the beach and to festivals and to the park, we taught each other our favorite recipes. Although I have changed her recipe a bit to suit my own tastes, whenever I use this recipe, I think of her and all the fun we had together and how rich my experience in Japan was thanks to the lovely friends that I made.
