1 cup pecan halves
2 Tbsp maple syrup
Pinch salt

1 small garlic clove, minced
1 Tbsp finely chopped shallots
¼ tsp salt
¼ tsp ground black pepper
1½ Tbsp maple syrup
2 tsp Dijon mustard
2 Tbsp red wine vinegar
6 Tbsp vegetable oil

10 cups mesclun greens, romaine or other lettuce
3 oz goat or blue cheese

1. Lightly oil or line 2 baking sheets with parchment paper.
2. In a small bowl, toss the pecans with 2 Tbsp maple syrup. Spread the pecans in a single layer on one of the baking sheets. Roast in a 375º F oven for 5 min, stirring once.
3. Immediately scrape the roasted pecans onto the second baking sheet and spread them in a single layer. sprinkle with a pinch of salt and set aside to cool.
4. Place the garlic, shallots, ¼ tsp salt, ground pepper 1½ Tbsp maple syrup, Dijon mustard, red wine vinegar and vegetable oil in a small jar with a lid. Shape to mix.
5. Place the greens in a large bowl, drizzle with about half the vinegrette and toss to combine. Add more vinegrette as desired. And toss again. Divide among individual plates and sprinkle with the cheese and pecans. Serve immediately.
