4 large zucchini, halved lengthwise

1 (16-oz.) jar marinara or spaghetti sauce

1 c. shredded mozzarella

1 cup of diced peppers & onions

1/2 c. mini pepperoni or cooked hamburger

Chopped fresh basil, or celery flakes for garnish

Preheat oven to 350 degrees

First Score zucchini (like you’re dicing an avocado) and scoop out insides. Discard seeds into trash. Scoop most of the pulp a large bowl.

In a large skillet over medium heat, heat olive oil. Add zucchini and sauté until with onions & peppers tender, 6 to 8 minutes, then pour in spaghetti or marinara sauce.

Place hollowed zucchini on a large baking sheet. Spoon on cooked pulp, onions & pepper and sauce, then top with mozzarella and mini hamburger pieces or pepperoni. Bake until zucchini is tender and cheese is golden, about 15 -30 minutes. Depending on the zucchini size.

Garnish with basil.
