1 packet small aubergines
2 small Maris Piper potatoes
1/2 brown and 1/2 red onion
2 spring onions
6 garlic cloves
3 green chillies
1/4 scotch bonnet
7 cherry tomatoes
Olive Oil
mustard seeds
Salt
Aromat

Directions:
Directions:
1. Heat oil and add pinch of mustard seeds and fry until they begin to pop

2. Add garlic, onions, chillies and cook til browned

3. Add aubergine, potatoes, salt and aromat and cook on a low heat covered tightly with foil and wok lid for 15 mins.

4. add tomatoes and continue to cook until vegetables are tender.

Lovely served with Basmati rice and/or Sada roti

This is my uncle Sharda's favourite and mum still sends him home with a supply of bigan and aloo when he visits. Mum is now 83!
