Maris Piper potatoes cubed (about 4 large)
5 cloves garlic chopped finely
1 large brown onion finely chopped
1 green chilli finely chopped
1/4 scotch bonnet (optional) finely chopped
small bunch of spring onions finely sliced
salt

Directions:
Heat olive oil in heavy wok and add, onion, garlic, chilli and scotch bonnet. Fry on very low heat. You are not trying to brown mixture but soften. If it is browned, the final colour of the dish will be dark.

Add chopped potatoes, salt and aromat and mix well.

Cook on very low until potatoes are cooked and some have crisped. You will need to stir frequently to loosen from bottom of pan. Don't worry if it catches......these bits are scrummy!

Serve with Sada roti, Bigan Chokha and Tomato Chokha for a typical Sunday morning Guyanese breakfast

We only ever had this on Sunday mornings after puja (prayers). It just didn't taste the same any other day!!! LOL!

Mum served this with Fry Bakes but I haven't perfected those yet!
