12 Large Flour Tortillas
7 large Eggs, lightly beaten
3 tbsp Margarine
1½ lbs. Ground Pork Sausage
2 cups Fried Potatoes (refer to side dishes for recipe)
1 tbsp Salt
2 cups Sharp Cheddar Cheese, grated
Black Pepper is optional

Directions:
Brown tortillas on an open flame or a hot electric burner (drag it across slowly turning it over to get both sides). Cover with towel to keep warm. In a skillet, Brown sausage, breaking it up with a spoon as you cook. Drain and set aside. In the now empty but dirty skillet, add margarine and heat on a medium high heat. Once melted stir in eggs, salt and pepper. Cool till fluffy with no runny egg. Take off heat.
Ready to assemble. In the middle of tortillas put a strip on potatoes, eggs, sausage, and cheese. Fold bottom half up, left and right ends in, and roll towards open side. Wrap each in plastic. Can refrigerate for up to 4 days. Or freeze for up to 3 months. For those who can't wait, eat it now. Serve with salt, salsa, or ketchup.
