2 carrots
2 celery ribs
1 onion
1 3 lb chicken, skin removed
10 C water
1/2 C barley
Salt and pepper to taste
1 tsp chicken bouillon
15 oz stewed tomatoes
1 small head escarole, coarsely chopped

Directions:
Directions:
Chop vegetables and sauté.
Add chicken and water.
Simmer 30 minutes
Remove chicken from pot.
Cool and remove chicken from bones. Cut into bite sized pieces.
Add barley, bouillon and salt and pepper.
Simmer 1 1/4 hours.

When barley is tender, add chicken, tomatoes and escarole. Simmer until heated through and escarole is tender.
