Ingredients:  
Ingredients:  
Fresh corn cut from 2 ears (or use frozen)
3 carrots, diced
3 stalks celery, diced
1/2 bunch broccoli, diced
2 red potatoes, diced
6 scallions, diced
1 1/2 quarts chicken broth
1 chicken breast, diced or shredded
juice of 1/2 lime
1 tsp grated ginger root
2 TBL sour cream

(Optional; 2 C cooked brown rice to make it heartier)

Directions:
Directions:
Combine all ingredients except lime, ginger and sour cream.
Simmer 1/2 hour.
Add rice if desired.
Add lime juice
To serve; garnish with ginger and sour cream.
