Ingredients:  
1 1/2 C mixed beans (soak overnight and drain)
1 C chopped onion
1 C chopped celery
2 TBL olive oil
1 C chopped peppers (red, yellow, and green)
1 tsp dried basil
1/2 tsp Italian seasoning
1 clove garlic, crushed
1 C chopped carrot
1 28 oz can tomatoes or marinara sauce
1 bay leaf

Directions:
Directions:
Sauté onions, celery and pepper in olive oil.
Add beans and remaining ingredients and cover with water.

Simmer, covered, 1 hour
