2 TBL butter
1/2 C finely chopped green onion
1/4 C finely chopped red bell pepper
1/4 C finely chopped celery
1 lb potatoes cut in 1/2 inch pieces
4 C corn (divided)
1 bay leaf
4 C chicken broth
2 C milk

Sour cream (optional)

Directions:
Directions:
Melt butter. Add onion, pepper and celery. Cook slowly about 10 minutes until vegetables are soft.
Add potatoes, 2 C of the corn, bay leaf, and chicken broth.
Bring to boil and simmer 15 minutes.
Purée the remaining corn with the milk
Add to soup and simmer 5-10 minutes longer
Remove bay leaf.
Add salt and pepper to taste.

Serve topped with sour cream if desired.
