3 cups. Whole Milk
2 large Eggs
3 large Egg Yolks
⅛ tsp. Salt
2 tsp. Vanilla Extract

Preheat oven to 325º. Place eight 4 oz. ramekins in a large roasting pan. Add 4 tbsp of water to a small pot(stainless steel).
Then add 1 cup of sugar and stir to dissolve. Cool over a medium high heat, swirling pan occasionally until caramel turns amber, about 6-8 minutes. Working quickly, divide caramel into the ramekins. Swirling each to coat the bottoms evenly.
In a medium pot, heat milk over medium heat until hot - but not boiling. In a medium bowl whisk together eggs, yolks, salt, and ½ cup sugar. Whole whisking ladle some hot milk into bowl. Continue whisking and ladling. Strain thru a fine sieve into a large liquid measuring cup. Stir in vanilla. Then divide the custard evenly between the ramekins. Carefully place roasting pan in oven, then add boiling water into pan (avoiding getting water in ramekins) bringing water level half way up ramekins.
Bake until custard sets, about 35 minutes. With tongs, remove ramekins from hot water and let cool slightly. Cover and refrigerate until cold, at least 3 hours up to 3 days. As you see fit. To unmold, run a sharp knife around inside of each ramekins and invert onto serving plates. You may need to shake gently to get it to release. Now serve.

I have heard about not stirring caramel. Note here you do not turn on heat till after you stir to dissolve sugar.
It has also been said your custard may lightly jiggle (like jello) in ramekins. And a little heat will loosen caramel in the bottoms of the ramekins allowing for easier release on plates.
