4 large Egg Yolks
1⅔ cup While Milk
½ cup Sugar, divided
2 tsp. Vanilla Extract *
3½ tbsp. Cornstarch
1 oz. Unsalted Butter

* For a stronger Vanilla taste use a Vanilla Bean or Vanilla Bean Paste.

In a large pot add milk and half the sugar and bring to a boil. Reduce to a medium heat, and keep on a low simmer.
In a bowl whisk the egg yolks. In a separate bowl combine the remaining sugar and cornstarch. Add the yolks to this bowl and whisk to combine. DO NOT DO THIS SOONER. Do it after milk is not or you run the risk of custard not setting. Add one cup of the hot milk to yolks mixture, whisking to combine. Mix it slowly back into pot and heat gently (a low heat) stirring with a wooden spoon. Stir continuously until custard behind to thicken. About 3-5 minutes. You'll want you custard to reach 185º before removing from heat. Add butter, as it will help the custard to thicken even more. After it cools down, add vanilla and stir to combine. Transfer to a bowl and cover with plastic to refrigerate. Serve warm or cold.
