3 lb. russet potatoes, peeled and cut into cubes
Kosher salt
1 (8-oz.) block cream cheese, softened and cut into cubes
4 tbsp. butter
½ c. milk
Freshly ground black pepper
Freshly chopped chives, for garnish

Directions:
Directions:
In a large pot, cover potatoes with water and season with salt. Bring to a boil and cook until totally soft, 16 to 18 minutes. Drain and return to pot. Add cream cheese and use a potato masher to mash potatoes with cream cheese until smooth. Meanwhile, in a small saucepan over medium heat, melt butter with milk until warm. Pour mixture over potatoes and stir until completely combined and creamy. Season with salt and pepper. Transfer potatoes to a serving bowl and season with more pepper and garnish with chives.
