8 oz. Extra Virgin Olive Oil or Vegetable Oil
8 oz. Unsalted Butter, melted
1½ cups Sugar
1½ cups Brown Sugar
6. Eggs
1 tsp. Vanilla Extract
1½ cups All-Purpose Flour
2 cups Cocoa Powder
¾ tsp. Baking Powder
½ tsp. Salt
15 ice-pop sticks
12 oz. Dark Chocolate, melted
Optional: Sprinkles or melted white chocolate for decorating

Preheat oven to 350º, lightly grease a 9 x 13" Baking dish and line bottom and sides (leaving an inch worth over sides of pan) with parchment paper.
In a large bowl, whisk oil and butter. Add sugars, eggs, and vanilla. Sift the flour, cocoa powder, and salt. Stir in gradually to wet ingredients. Pour into pan and bake for 18-20 minutes. Cool completely. Using the hang over parchment in baking dish, pull brownies out of pan. Cut brownies into 15 even pieces (rectangle recommended). Push sticks into each cut brownie. Place on a line baking sheet. Place in fridge for 20 minutes.
Ready for fun. Melt your chocolate now, you can do it in microwave or a double broiler. Dip each brownies into chocolate to coat. Add sprinkles, if you are using them. Chill for another 10 minutes. If you want to do white chocolate decor, do so and rechill again, before serving.
