2 lb chicken, cut into 1" pieces

1 c finely grated onion (or 1 Tbsp onion powder)

½ c freshly squeezed lemon juice

2 tsp salt

4 Tbsp melted butter

⅛ tsp ground saffron dissolved in 1 Tbsp warm water

Directions:
Directions:
In a stainless steel or glass bowl, combine onion, lemon juice and salt, stirring until thoroughly combined.

Add chicken and coat well. Marinate 2 hours room temperature or 4 hours in refrigerator, turning pieces occasionally.

Preheat grill. String on skewers, being careful not to overcrowd.

Stir melted butter and saffron mixture into marinade. Brush chicken evenly on all sides with marinade.

Grill about 3" from heat for 10-15 minutes, turning skewers frequently and basting with marinade. (If broiling in the oven, place skewers across roasting pan with at least 1" under meat. Turn frequently and marinade.)

Serve with chili (Persian rice).
