1 tbsp vegetable oil
4 boneless, skinless chicken breasts, cut into cubes
15 oz chicken broth
1/4 cup ranch salad dressing
2 tbsp flour
1 - 4 oz can chopped green chilis
2 cups Mexican blend grated cheese
6 medium corn or flour tortillas, whichever your family prefers, cut into 1" pieces
1/2 cup of your favorite salsa

Heat oil in a large deep skillet on medium-high heat. Add chicken. Cook for 7 minutes until chicken is cooked through, stirring occasionally. In a small bowl, whisk together 2 ounces of the chicken broth and the flour until a paste is formed. Add remaining broth and the salad dressing and whisk until combined and smooth. Gradually add to the skillet, stirring constantly. Add green chilis and tortilla pieces, stir to combine. Bring to a boil, reduce heat and simmer for 3 minutes. Sprinkle with cheese, do not stir. Let simmer for 3 more minutes or until cheese is completely melted. Top with salsa and serve. I like to have sour cream to serve on the side.
