1 cup apple cider vinegar

1 cup 100% apple juice

½ cup ketchup

2 Tbsp Worcestershire sauce (or more to taste)

½ cup packed brown sugar (dark for sweet, light for regular)

1 Tbsp smoked paprika

2 tsp granulated garlic

2 tsp granulated onion

2 tsp finely freshly ground black pepper (1 tsp for sweet)

1 tsp celery salt

½ tsp cayenne pepper (more if you like heat)

½ tsp (pinch) baking soda (dilutes vinegar taste)

2½ Tbsp cornstarch

Thin sauce: Combine all ingredients (OMIT cornstarch) in a saucepan and whisk well. Bring just to a simmer and remove from heat.

Thick sauce: Combine all ingredients except apple juice and cornstarch in a saucepan and whisk well. Make a slurry with the apple juice and cornstarch, then add to the saucepan and whisk well. Rolling simmer/light bubbles approximately 45 minutes, stirring occasionally, and remove from heat.

Adjust sweetness by adding brown sugar and/or vinegar.
