1 large onion (yellow or sweet)
A mix of red, yellow, green and/or orange sweet peppers (1-inch pieces)
1 or 2 zucchini (1-inch pieces)
1 or 2 cups of cherry tomatoes
1 Tbsp olive oil
½ tsp salt
½ tsp pepper
1 pkg (12 oz) Italian sausage (can be cooked whole or cut into 1½-inch slices and put on a separate skewer)
[Optional] 8 cubes of provolone cheese
[Optional] Other herbs can be sprinkled on veggies, such as oregano, basil, parsley, thyme, rosemary, chervil, Tarragon, coriander, cumin, dill, ginger, garlic, lemongrass, and/or curry.

1. Cut veggies into 1-inch pieces and place in a large bowl.
2. Add cherry tomatoes, oil, salt, and pepper; toss to coat.
3. [Optional] If desired, add other herbs.
4. On metal or soaked wooden skewers, thread vegetables, and if desired, the sausage slices.
Tip: We cook the sausage separately since it takes longer to grill -- can be put on skewers or can be cooked whole on the grill.
Tip: We also separate veggies that need longer on the grill onto separate skewers.
5. Grill, covered, over medium heat for 8 to 10 minutes, turning occasionally. Vegetables should be tender; Sausage should be cooked through.

Lots of choices of veggies. We put different vegetables on separate skewers because some need to be cooked a bit longer on the grill. We also cook the sausage separately, either on skewers or leaving the sausage whole, right no the grill.
