2 lbs.(about 4 large) Idaho potatoes, peeled
⅓ cup all-purpose flour
1 tsp, baking powder
1½ tsps. kosher salt
⅛ tsp. white pepper
2 large eggs, lightly beaten
½ cup onion, finely chopped
Vegetable oil for frying

Blend well, baking powder, salt and white pepper, set aside. Grate potatoes and onion on large holes of box grater or shred in food processor. Working in batches wrap the potatoes and onion in a dish towel or paper towels and squeeze out as much moisture as possible. Place the potatoes in a large mixing bowl, stir in the eggs and onion and dry ingredients and mix well. Line a large rimmed baking sheet with two layers of paper towels. Lace about 1/4-inch of vegetable oil in a large skillet and heat over medium-high heat. Using a large slotted spoon, place 2 Tbsp. portions of the potato mixture in the hot oil, pressing them into 3" diameter patties. Fry until golden brown and crispy, about 3 minutes per side. Don't overcrowd the pan. Transfer cooked latkes to a paper towel-lined platter to absorb any excess oil. Keep warm in 200°F oven loosely wrapped in foil until ready to serve.
