For the Salad:

6 ears of corn cooked and cut or 2 cans of canned corn drained (best fresh)
2 tsp. of olive oil
2 cloves of garlic minced
1 cup of quinoa well rinsed and drained
1 3/4 chicken broth ( can use vegetable broth or water substitute)
4 green onions sliced
1/4 cup of minced fresh cilantro

For the Dressing:

3 oz. or 6 tbls. fresh lime juice or lime concentrate (fresh organic limes are the BEST)
3 tbls. olive oil
2 tablespoons honey
3/4 tsp. cumin
3/4 salt
1/2 tsp. pepper
1/2 tsp. chili powder

Directions:
Directions:
Heat 2 teaspoons olive oil in a medium saucepan over medium heat.
Add the garlic saute until fragrant, stirring, approx. 1 minute
Add the quinoa and chicken broth bring to a boil.
Reduce heat, cover, and simmer on low until liquid is absorbed 12-16 minutes. Remove from heat when done.

While quinoa cooks or you could prepare beforehand, in a bowl combine the dressing ingredients whisk until well combined

Transfer cooked quinoa into a large bowl, mix in corn, green onion, and cilantro.
Add dressing mix and stir until everything is coated and mixed well.

You can serve warm or cold.

This dish was introduced to our family on a camping trip on one 4th of July by a very nice couple (Lynn and I don't remember the gentleman's name) who invited us to a cookout with them. Since then we have tried various versions of the salad and numerous recipes before finally settling on this version.
We like to eat this cold in the summer when we have access to fresh corn on the cob, YUM!!!!!
