12-14 oz. Raw shrimp (cleaned)
½ C. Diced onions
2 Jalapeños, seeds removed, finely diced.
1 C. Fresh spinach, chopped
1 tsp. Butter for frying
4 oz. Softened cream cheese
¼ C. Beer plus more as needed
1 Tbsp. Melted butter
3 Tbsp. Franks Red Hot sauce or to taste
3 oz. Grated Monterey Jack cheese
2 oz. Grated old cheddar cheese

Chop shrimp into small pieces. Fry onions and jalapeños in oil over med. high heat until onions are translucent. Do not brown. Add spinach and shrimp. Cook until shrimp is opaque. Reduce heat to med. and stir in cream cheese and beer. Add grated cheeses, hot sauce, and melted butter. Stir until hot and melted, adding more beer as needed to make a dip consistency. Serve hot.
