3 cups grated zucchini
2/3 cup melted unsalted butter
1 1/3 cups sugar
2 eggs beating
2 tsp vanilla
2 tsp baking soda
Pinch salt
3 cups flour
2 tsp cinnamon
1/2 tsp nutmeg
1 cup walnuts
1 cup cranberries (optional)

Directions:

Preheat oven to 350 degrees. In a large bowl combine the sugar, eggs, and vanilla. Stir in the zucchini and then the melted butter.

In a separate bowl mix together flour, baking soda, nutmeg, cinnamon and salt. Stir these dry ingredients into the zucchini mixture. Stir in walnuts, cranberries.

Fill muffin tins, bake on middle rack until golden brown, top of muffins bounce back when you press on them. about 20 to 25 minutes. Cool for 5 minutes, remove from
tin.
