2 tablespoons peanut oil
4 cloves garlic, minced
1-inch piece of ginger, minced or grated
1/2 onion, minced
6 fresh red hot chilies, minced
1/4 cup rice vinegar
1 tablespoon sugar
2 tablespoons ketchup
2 tablespoons Chinese rice wine (sake okay)

Heat the oil in a small saucepan over medium-high heat. Add the garlic and ginger and cook 30 seconds. Add the onion and cook 1 minute. Add the chili pepper and cook 30 seconds. Add the vinegar, reduce heat to low, and simmer 10 minutes. Add more water if needed. Add the remaining ingredients and simmer 5 minutes. Puree using hand-held mixer or cool and puree in blender.
