2 cups Granulated Sugar
2 cups Peanuts (unsalted & roasted)
1 tea. Baking Soda

Grease a baking sheet. Set aside

Directions:
In a heavy skillet (iron is best) Add sugar and caramelize. This is a slow process and you don’t want to burn the sugar. Start with heat on med-low, you can adjust but go slow. The sugar will begin to melt. Stir constantly With wooden spoon and break up any clumps until the sugar is a lovely rich golden brown and completely liquid.

Remove from heat (to stop the cooking). Stir in peanuts to coat, add baking soda (which foam and hardens the sugar) You will need to work quickly to get the soda mixed in completely and quickly pour onto the greased baking sheet — spreading flat before it hardens. When cooled, break apart into small pieces and store in airtight containers.
