1 lb asparagus trimmed and cut into 1" pieces
2 tbsp and 1/4 cup butter
4 green onions chopped
1 clove garlic minced
4 oz swiss cheese shredded (1 cup)
1/2 cup plain bread crumbs
1/3 cup fresh dill
1/4 cup chopped fresh parsley
1 tsp lemon zest
1/2 tsp pepper
3 eggs divided
8 sheets thawed phyllo dough

2 Preheat oven to 350 degrees. Bring pot of salted water to a boil. Add asparagus, cook until tender 5 minutes. Drain. In skillet melt 2 tbs butter over medium heat add green onions and garlic. Cook stirring about 3 minutes. Remove skillet from heat; cool slightly. Add asparagus, cheese, bread crumbs, dill, parsley, zest and pepper. Beat 2 eggs, stir into asparagus mixture. Melt remaining butter, place 1 sheet of phyllo on wax paper, long edge facing you. brush with some butter top with another sheet phyllo. Repeat layering phyllo and butter. Spoon asparagus mixture in 4" wide strip 1" from edge of phyllo nearest you and side edges. Fold side edges over filling. Starting at long side nearest you and using wax paper to help roll the strudel.

Place on ungreased cookie sheet. Combine remaining egg with 1 tbs water, brush some on strudel. Bake until golden 40 to 50 minutes. Cool slightly before slicing
