2 tablespoons peanut oil
1 pound pork steak, cubed
1 cup chopped onion
1 clove garlic, minced
1 cup chopped celery
1 teaspoon salt
1/8 teaspoon pepper
1 cup hot water
1 can bean sprouts, drained
2 teaspoons soy sauce
1/3 cup cold water
2 tablespoons cornstarch

Directions:
Directions:
Heat a large skillet or wok over medium high heat. Add the oil. When the oil is hot, sear the pork cubes. Add the onion and fry 5 minutes. Stir in the garlic, then the celery, salt, pepper and hot water. Cover and cook 5 minutes, until the pork is tender. Add the bean sprouts, mix thoroughly and heat to a boiling point. Add the soy sauce. Combine the water and cornstarch, stir into the chop suey and bring to a boil, stirring gently. Can be served over chow mein noodles or rice.
