8 to med beets
1/4 cup balsamic vinegar
2 tbsp honey or to taste
Salt and Pepper
1/3 cups walnuts
125 grams blue cheese pulled into small nuggets
1 tbsp chopped parsley

Directions:
Directions:
Boil the beets unpeeled until just tender. Drain well and cool in ice water. Trim the top and bottom off each beet and peel off skin. Thinly slice the beets and arrange in an overlapping layer on a platter. Combine vinegar, honey and pour over beets season with salt and pepper. Let the beets steep in the dressing. add beets over salad (mixed greens, arugula, spinach) add walnuts and blue cheese and parsley.
