4 large baking potatoes
1 tsp chopped fresh parsley
1/4 tsp ground pepper
1 cup chopped ham
1 cup shredded swiss cheese
1/2 cup light sour cream
1/4 tsp dry mustard
Paprika

Directions:
Directions:
Pierce potatoes with fork. Baked in oven at 425 degrees for 50 to 60 minutes.

Cut lengthwise and scoop out potatoe pulp into a mixing bowl.

Add to the potatoe pulp sour cream, parsley, dry mustard, pepper. Beat ingredients with electric mixer until smooth. DO NOT overbeat.

Stir in ham and 1/2 cup cheese. Spoon evenly into potatoe skins. Top with remaining cheese and sprinkle with paprika.

Bake uncovered at 425 degrees for 20 minutes or until lightly browned.
They can be frozen or kept in the fridge 24 hours before baking.
