4 chicken breasts
1/2 cup all-purpose white flour
Salt and pepper
2 eggs
1/4 cup milk
2 cups matzo meal or breadcrumbs

2 cups cherry tomatoes
1/2 can tomato paste
1 red chili, sliced
1 tablespoon lemon zest
2 tablespoons basil pesto
Salt and pepper
1/2 pound mozzarella, sliced

Directions:
Directions:
Preheat oven to 375 degrees. Using a meat mallet, pound each chicken breast to about 1/2 to 1/4 inch thick. Place flour, salt and pepper in a shallow pan and mix to combine. Beat eggs and milk and place in a separate shallow pan. Put the matzo meal or breadcrumbs in a third pan. Coat the chicken with the flour, then dip in the egg mixture and finally coat in the crumbs.

Heat a large skillet over medium heat. Add oil and when hot cook the chicken in batches about 2 minutes per side, or until golden and cooked through. Set aside. Place tomatoes in a bowl and crush lightly with a fork. Add the tomato paste, chili, lemon zest, salt and pepper, and mix to combine. Place the chicken in a greased roasting pan and top with the tomato mixture and mozzarella. Bake 10 to 12 minutes, or until the cheese is melted.
