1 Box Puff Pastry
4 large Eggs
1 cup 2 tbsp. Half & Half Cream
1 tbsp. Thyme
Salt and Pepper
¼ tsp. Nutmeg
1½ cups Gruyere Cheese, shredded
1½ cups Fresh Spinach, chopped
1 medium Red Bell Pepper
8 slices Bacon, cooked and crumbled

Preheat oven to 400º. On floured surface, roll each pastry sheet into 12" squares , cut each to 9 different squares. Place each into an ungreased muffin pan. Pressing them down into the bottom and along the sides, allowing the corners to point upward.
In a bowl whisk 3 eggs with 1 cup of cream, add seasoning. In another bowl combine cheese, spinach, red pepper, and bacon. Divide in between pastry cups. Pour egg mixture on top of that. Whisk the last egg and 2 tbsp of cream together, and brush over pastry edges. Bake for 15-18 minutes until golden brown. Cook for 5 minutes the move to cooling racks to cool to a warm temperature, then serve.
