Goose-or any "gamey" bird
1 large onion-chopped
6 slices Bacon
Mushrooms
1 Cup Cooking wine
Water
kitchen bouquet
1 can chicken gravy (mushroom or beef okay)

Directions:
Directions:
Cut meat from bone (or cut into pieces)
Brown
Add onion, sliced bacon, mushrooms.
Add 1 cup cooking wine
Add kitchen bouquet (browning and seasoning sauce), 1 can of chicken gravy.
Simmer 2 to 2 1/2 hours (depending on bird)-probably less for smaller birds, because they are generally more tender than geese.

I do remember having these amazing Sunday dinners. Nonnie's biscuits and gravy were usually added to these meals.
