Directions:
Cut off both ends of the french bread and save them. Hollow the loaf, taking care not to break the crust. Use the soft interior to make bread crumbs for the meat filling.

To make the meat filling, combine all remaining ingredients. Make sure they are well mixed.

To make the Wellington, stuff the meat mixture into the french loaf. Replace the ends. Wrap the loaf in foil and bake at 350 degrees for 1 hour. Open foil but do not remove it. Bake the loaf an additional 10 minutes to crisp the crust. To serve cut slices with a sharp knife.

Serve with horseradish sauce by combining equal portions of mayo, sour cream and horseradish, salt and pepper.
