For the dough:

6 eggs
6 tablespoons sugar
5 tablespoons flour
2 tablespoons unsweetened cocoa powder
1 scant teaspoon baking powder

For the glaze:
100g dark baking chocolate
2 tablespoons whipping cream

For the cream:
550 mL whipping cream
4 tablespoons unsweetened cocoa powder
5 tablespoons caster sugar
1 packet or 2 teaspoons vanilla sugar

Directions:
Directions:
To make the dough, whip the egg whites with the sugar until stiff peaks form, then add the egg yolks one by one. Sift together the flour, baking powder, and cocoa, and fold into the mixture. In an oven preheated to 175 degrees, bake in a jelly roll pan lined with parchment paper for 25-30 minutes or until a toothpick inserted in the middle comes out clean. Remove from the oven and allow to cool on a rack or flat, floured surface, being careful to pull the paper off while still warm. Cut into half widthwise. Melt the chocolate using indirect heat, and combine with the cream. Spread this glaze on top of one of the halves of the dough – this will go on top. Place this half in the refrigerator to firm up the glaze, then remove and cut into squares – the size of these will dictate the size of the individual pastries. Combine the sugar, vanilla sugar, and cocoa powder. Whip the cream until almost firm, then continue to whip and add in the cocoa mixture until fully incorporated, stiff, and light. Spread the cream on the base piece of pastry, then place the individual glazed squares on top. Place in the refrigerator to set for 1-2 hours and enjoy for up to a week.
