2 jars marinated artichoke hearts
1 small onion finely chopped
1 clove garlic
4 eggs
1/8 tsp pepper, oregano, seasoning
1/4 tsp salt
1/4 cup fine dry breadcrumbs
1/2 pound cheddar cheese (sharp)
2 tbsp minced parsely

Discard marinate from one jar of artichoke hearts. Drain marinate from 2nd jar into frying pan and over medium heat saute garlic and onion until transparent (5 minutes). While onion and mixture is cooking, chop artichokes finely. Beat eggs, add all the seasoning, bread crumbs, cheese and parsley then blend in onion/garlic mixture and chopped artichoke hearts.

Grease a 8" square pan and turn mixture into same. Bake in 325 degree oven for about 35 minutes or until centre is well set. Cool and then cut into squares.

Can be served hot or cold.
