1 onion, chopped
3 cloves of garlic, sliced
300g shredded sour cabbage (sauerkraut is acceptable, but rinse first if it is too sour)
1 tomato, chopped (optional)
300g smoked meat, preferably sausage, or ham hocks, or a mixture of both.
2-3 bay leaves
1 scant tablespoon of sweet paprika
Salt and pepper to taste
1 tablespoon oil for roux, optional
2 tablespoons flour for a roux, optional

If using smoked ham hocks, boil these in a small saucepan of water until fully cooked. Debone and cube and set aside. In a saucepot, sauté the onions in oil over low heat until translucent. Add the garlic and sour cabbage and tomato, if used, and bring to a simmer. Cube and add the sausage and ham and enough water to cover the mixture. Add the bay leaves and the paprika and cook until the cabbage softens and the meat is tender. Some families thicken this soup with a roux made from a tablespoon of oil and two tablespoons of flour. If doing so, fry the flour in a skillet on low heat, stirring continuously until very lightly browned. Remove from heat, and thin with a couple of spoonsful of broth, adding gradually while stirring to prevent clumping. Strain into the soup and bring to a boil—season with salt and pepper to taste. The soup will taste better if left to sit for a day as the flavors will meld together. When serving, we traditionally add a dollop of sour cream to the top of the bowl and serve with a slice of bread.

This soup is traditionally made at the end of the year, partly because it used sour cabbage and smoked meat, which could be easily preserved before modern refrigeration techniques existed. It is considered a traditional hangover cure to be consumed after a night out. Clever homemakers prepare this in advance before going out, so the next day, the family has a delicious (and helpful!) way to overcome the effects of a big night on the town.
