1 package (1/2 cup) macadamia nuts (Open Nature from Jewel)
1 cups panko breadcrumbs (Vigo Italian)
1-2 garlic cloves
2 tbsp melted butter
flour for dredging
1 egg, lightly beaten
2 boneless, skinless halibut fillets
2 tbsp olive oil and 1 tbsp butter for pan
12-14 asparagus spears

Preheat oven to 400 degrees. Roast the asparagus for 10 minutes and set aside. Place cast iron or carbon steel pan in oven and preheat for 10 minutes while preparing the fish.

Salt and pepper the fish fillets.
Place flour in bowl #1 and lightly beaten egg in bowl #2
Chop the macadamia nuts, garlic and bread crumbs in food processor.
Place in bowl #3 and mix in melted butter.

Dip each halibut filet one at a time into the flour. Shake off the excess flour and gently turn over inside the egg to coat. Let the excess egg drip off and then place it into the breadcrumb mixture. Use a spoon to cover and coat the fish with the breadcrumbs. Be sure to coat the top, bottom, and all sides. Gently transfer the coated fish to a plate.

Take preheated pan from the oven and add olive oil and butter, returning to oven for 1 minute .

Add halibut fillets and return to oven for 5 minutes. Flip over the fillets and add the asparagus to the pan for 5 minutes. Add extra butter or oil if dry.

Plate the fillets over the asparagus and serve with lemon wedge.
