4 Tbsp Unsalted Butter, softened
8 Tbsp Light Brown Sugar
4 firm ripe Bananas, peeled - cut in an angle ¼" slices
4 cut 6" round Puff Pastry
1 tsp. Caramel Topping, optional
Powdered Sugar for surface to cut out Puff Pastry

Preheat oven to 400º. In a 4 oz. ramekin, smear bottoms with 1 tbsp of butter. Sprinkle each buttered ramekin with 2 tbsp of sugar. Lay bananas in an over lapping pattern to the top of dish. You can, at this point, add the Caramel Topping. Lightly dust a flat surface with a little bit of powdered sugar. Use a 5" round cookie cutter (slightly bigger than ramekin). Unfold Puff Pastry, and cut 4 tops out, saving left over dough for something else. Finally top each with a Pastry round, tucking in edges of dough.
Put fully prepared ramekins on to a baking sheet. Bake until golden brown, puffed, and bubbly. About 20-25 minutes. Invert on to plates while warm, then serve. Or store in a container and warm in a microwave before eating.
