4 lb. Venison
1 lb. Fatty Hamburg or Sausage
5 Tbsp. Curing Salt
2 Tbsp. Mustard Seed
2 Tbsp. Coarse Ground Black Pepper
2½ Tbsp. Garlic Salt
1 Tbsp. Smoked Salt
1 Tbsp. Liquid Smoke
2 Tbsp. Red Pepper Flakes

Mix ingredients all together and refrigerate mixing once a day for the next 3 days. Mix it again on the 4th day; make into rolls. Put on broiler pan or oven racks with cookie sheet under it to catch drips. Bake at 200º for 8 hours. Leave oven door open for moisture to escape. Cool, refrigerate or freeze. Will keep 2-3 weeks in refrigerator.
