1/2 medium seedless ripe watermelon
2 cups water
ice
2 Tbsp maple syrup or honey (more to taste)
ice
1 lime, sliced into 8 thin wedges (optional)
8 to 24 mint leaves (optional) (1 to 3 per glass)
VARIATIONS
2 limes
1 c tart cherry or pomegranite juice or no sugar added cranberry juice

Cut watermelon in half, then into eight wedges. Cut rind off each wedge, and cut melon flesh into large chunks. Place in processor or high-powered blender (as much as fits) and process until well pureed. Drain through mesh strainer into bowl or large 8c measuring cup. Repeat until all melon is processed.
I found 1/2 medium melon created 1 quart of strained watermelon juice
If desired, you can place in quart jars (hiking water bottles work well) and store in fridge until ready to use.
To serve, in large pitcher mix 4 c juice with 2 c water and maple syrup or honey.
In each 16 oz serving glass place one lime slice and 1-3 mint leaves, muddle in the glass. (If you don't have a muddler (who does really?) use whatever you have to mash down and 'bruise' the lime and mint). Fill glass with ice and pour watermelon aqua fresca over.
VARIATIONS:
Omit maple syrup. Cut peels off of two limes and puree with the watermelon. Add 1 cup of tart red 100% juice (cranberry, tart lime, pomegranate are good).
