Seafood Gumbo Recipe

1/2 pound of Bacon, cut into small pieces
1 onion, chopped
6 stalks of celery with the leaves on, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1-14.5 oz can of chopped tomatoes
1/3 cup of seafood seasoning
2 tsp of Gumbo File'
2 lbs. of white fish
1 lb of shrimp, cleaned, deveined, and take off the tails (save the tails and shells)
1 lb of crab, cleaned --canned or fresh

1 dozen oysters
1 1/2 dozen scallops

Saute' the bacon, keep stirring on med heat, add the onions, celery, and bell peppers. Add the
When the vegetables are soft. Take off the heat and save the vegetables.

Add the fish to a stock pot with a 1/2 gallon of water or fish stock.
Simmer the fish for 5 minutes, then add the shrimp tails and shells.
When the fish is cooked. Take out the fish and separate the bones and the skin.
Flake the fish into a separate bowl. Strain the fish stock and put the strained stock back into the stock pot.

Place the flaked fish back into the stock pot.
Add the canned tomatoes.
Bring the Gumbo to a simmer, low heat.

Add the shrimp, crab and the rest of the seafood.

Add the Gumbo File'

Simmer for 5-10 minutes.
