3 c. Cake flour
1 ¾ c. Sugar
3 Tbsp. Unsweetened cocoa powder
1 tsp. Baking soda
¼ tsp. Salt
½ c. Butter, cut in cubes
3 Eggs
1 c. Buttermilk
¾ c. Canola oil
1 - 2 Tbsp. Red food coloring may do less depending on preference
1 Tbsp. Vanilla

Frosting:
1 - 8 oz. Cream cheese, softened
6 Tbsp. Butter , softened
2 ½ c. Powdered sugar
1 tsp. Vanilla

Directions:
Directions:
Preheat oven to 350º. In a mixer, stir together flour, sugar, cocoa powder, baking soda and salt. Beat the butter into the flour mixture, one cube at a time. Continue to beat until it is coarse. In a small bow, whisk together eggs, buttermilk, oil, red food coloring and vanilla. Add the buttermilk mixture to the dry ingredients and beat until mixed well. Spread into 2 greased 8 or 9 in. cake pans. Bake for 15-25 minutes or until cake is done. Let cakes cool completely before icing. Frost the cake and enjoy!

Frosting:

In a large bowl, cream together cream cheese and butter until light and fluffy. Add powdered sugar and mix until creamy. Add vanilla and stir very well. Frost the cake.
