Not Really Chicken Alfredo Recipe

Ingredients: 2-3 large chicken breasts, deboned and cut into bite sized pieces 4 cloves garlic 1/4 cup parsley 3 T flour 1 t salt 3 shakes pepper 1/2 stick butter 2 cups milk 1½ cups shredded pepper jack cheese 1/4 cup grated parmesan cheese 16 oz cooked pasta (I like fettuccine or penne with this)

Directions:Cook chicken and garlic in 1/4 stick of butter until chicken is lightly golden browned. Remove chicken and place on paper towel. Add remaining butter to frying pan and heat til bubbling and add flour mixing well and incorporating remaining garlic bits. Cook flour and butter for about a minute on medium high then add milk, salt, pepper, and the pepper jack cheese. Bring back to just starting to boil stirring often and then reduce heat and add the chicken back in. Cook another 5 minutes and then serve over pasta. Sprinkle with fresh grated parmesan. |

Notes: I made this up when the kids were in high school and it was a big hit, and it is probably my favorite dinner.
