4-6 lbs chicken wings
Vegetable oil for frying
Large bottle Texas Pete Hot Sauce
1-2 sticks of butter
Salt and pepper

Remove tips from wings. Cut/separate each wing into two pieces. Wash chicken, pat dry. Put 1/4" of oil in skillet and fry wing sections until golden brown and place on paper towels.

Fill medium saucepan with hot sauce til about 1.5 inches from the top. Add a stick of butter and heat until butter is melted, stirring occasionally. Leave on warm while coating wings.

When done frying wings, place in hot sauce butter mixture. The longer you leave them in the sauce mixture the hotter they will be. For mild I leave in about 3 minutes I guess.

Replenish hot sauce and butter in the same ratio as needed depending on how many wings you are making. The butter is what gets the hot sauce to really stick.
Place wings on a baking sheet and cook in 350 degree oven until browned, you want them to be crispy on the outside, about 30 min. tops.

Serve with ranch dressing and celery sticks.

I always struggle with the serving sizes. My gang can demolish a bunch of these wings, so for us this feeds about 4 LOL
