1 cup water
1 teaspoon active dry yeast
1 cup bread flour
1 teaspoon salt
1 tablespoon olive oil
1-2 cups whole-wheat flour

Directions:
Directions:
Put water in the bowl of a stand mixer and sprinkle with the yeast, let proof 10 minutes. Using the paddle attachment, stir in the bread flour; let rise 45 minutes. Add salt, oil and some of the whole-wheat flour. Switch to dough hook and add enough flour to make a firm dough. Cover bowl and let rise to double. Punch down dough, turn out onto floured surface, and knead 10 times to release air bubbles. Cut dough into 2 pieces and shape into balls. Proceed as per instructions above under Pizza.
