1 cup self raising flour
2 teaspoon ghee (Clarified butter)
2 teaspoon lemon juice
Egg yellow colouring
ghee (Clarified butter)/oil for frying

Syrup:
1 cup sugar
2 teaspoon lemon juice
¼ cup water
½ teaspoon rose essence
Yellow colouring

METHOD
1 Make syrup by melting ingredients over low heat until thick. Set aside.
2 Rub ghee (Clarified butter) into flour and make a thin paste with water. Add lemon juice and enough colouring to make a dough mixture a bright yellow/orange colour.
3 Heat oil/ghee (Clarified butter) in a frying pan. Pour dough mixture into a tomato/mustard sauce dispenser or pastry bag and drizzle into pan mixture in shapes of circles. A safer method is to pipe onto a saucer and the slide into hot oil
4 Fry till golden brown and crispy. Soak fried hot jalebis in lukewarm syrup for 2-3minutes and then place on a tray to cool. Do not cover immediately or the jalebis will go soft and soggy
